The History of Cyclamates

Cyclamate was synthesized in 1937 by a University of Illinois (United States) student by the name of Michael Sveda, who accidentally discovered its sweet taste.

Sodium Cyclamate has the following characteristics:
· Good taste – compared to sugar
· Non-caloric – contains zero calories
· Good Solubility – highly soluble in water
· Economical – when used alone
· Good stability – when used in baking

Cyclamate is much sweeter than sucrose. The relative sweetness can vary from 25 times as sweet to 40 times as sweet depending on usage concentrations.
