| Ingredients: |
| Crust |

1 1/2 cups (360mL) graham wafer crumbs |
|
3 Tbsp. (45mL) SugarTwin® Granulated Brown |
|
1/3 cup (80mL) unsalted butter, melted |
| Filling |
|
1 cup (240mL) 2% cottage cheese |
|
2 (8 Oz.) (500g) light cream cheese, room temperature |
|
1 tsp (5mL) fresh grated lime peel |
|
2/3 cup (160mL) SugarTwin® Granulated White |
|
2 Tbsp. (30mL) all-purpose flour |
|
1 tsp (5mL) vanilla extract |
|
3 Tbsp. (45mL) fresh lime juice |
|
3 large eggs, lightly beaten |
|
1/4 cup (60mL) milk |
|
1 cup (240mL) light sour cream |
|
1 tsp (5mL) SugarTwin® Granulated White |
|
Fresh lime slices, for garnish |

Instructions: |

Crust |
|
|
1. Preheat oven to 375°F(190°C), butter an 8 (20cm) springform pan. |
|
|
2. Mix graham wafer crumbs, SugarTwin® Granulated Brown, and melted butter, press in bottom and up sides of prepared pan. Bale 10 minutes, set aside. |

Filling |
|
|
3. To prepare filling, whip cottage cheese in food processor until smooth. |
|
|
4. Add cream cheese in chunks while machine is running, process until smooth, add lime peel. |
|
|
5. Add SugarTwin® Granulated White and flour, process quickly. |
|
|
6. Add vanilla, lime juice, eggs and milk, pour mixture over crust. |
|
|
7. Bake in oven for 45-55 minutes until cake is just set, remove from oven. |
|
|
8. Stir together sour cream and remaining SugarTwin® Granulated White, spread over cake. |
|
|
9. Cool at room temperature for 45 minutes, remove sides from pan, chill in refrigerator 3-4 hours before serving. |
|
|
10. Decorate with fresh lime slices. |
|
